Real Fresh Applesauce

"Real Fresh Applesauce is non-dairy and low-glycemic. A real treat served warm on a winter's day or cool on a summer's day. Makes about 7 cups."

Ingredients

  • 3 lbs McIntosh, Northern Spy, or Winesap Firm Apples
  • 1 lb Braeburn or Honey crisp Soft Apples
  • 1/2 C Water (add more when and only if needed)
  • 2-4 T Agave Low glycemic sweetener
  • 1/2 t Cinnamon
  • 1/4 t Nutmeg
  • 3/4 C Chopped Walnuts Optional
  • 1/2 C Golden Raisins Optional

Instructions

  1. Put peeled, cored and quartered apples in water in a pot.

  2. Heat over medium heat until boiling.

  3. Add optional golden raisins at this point.

  4. Reduce to a simmer.

  5. Stir occasionally for about 5-10 minutes adding water only if needed.

  6. Apples should be tender.

  7. Do not allow applesauce to burn.

  8. Add Agave and spices.

  9. Stir thoroughly.

  10. Remove from heat.

  11. Serve plain, under a dollop of Cinnamon Apple Almond Yogurt or with Whole Grain Banana Apple Muffins I Love!
